Food and beverage production for the Dominican Republic stand, guest of honour country at FIT 2026 (International Tourism Trade Fair of Latin America) at La Rural, Buenos Aires.
FIT, the International Tourism Trade Fair of Latin America, reached its 30th edition in 2026, and the Dominican Republic came to La Rural as guest of honour country, with a 400 m² stand. The Dominican Republic Tourism Office in Argentina, part of the Dominican Ministry of Tourism, hired us for the stand’s food and beverage production: getting its cuisine tasted in Buenos Aires across the four days of the fair, in an edition visited by more than 140,000 people and 1,697 exhibitors.
Cooked off-site, served at the stand
Cooking was not allowed on the stand. Our team of professional cooks produced everything in an external kitchen and we brought it in every day, to serve it at the right temperature from the stand throughout the four days.
Dominican recipes, local ingredients
Part of the original recipe does not exist in Argentina, starting with Dominican longaniza. We found the equivalent for each ingredient and agreed it with the client, so the flavour stayed Dominican.
A menu you eat standing up
Everything in tasting format, in portions you can hold in one hand: ceviche, ragout, sancocho, montadito, Morir Soñando and four cocktails named after Dominican provinces.
Quantities planned across four days
The fair has a weekend open to the public and trade-only days. We split the more than 7,000 portions day by day so the last day had the same as the first.
At a country’s stand, the food is the destination people take with them. It has to taste like the Dominican Republic, even when it is cooked in Buenos Aires.
